Great Grilling Recipes: Big Ol' Mess

"The sloppier it gets, the better it tastes"

1 lb smoked sausage, cut into chunks- Ekridge Sausage
3 jalapeno peppers, sliced
1 green pepper, cut into bite sized chunks
1 sweet onion, cut into bte-sized chunks
1 foil cooking bag
1/4 cup Tabasco sauce (or just a couple squirts to your liking)
1 10oz jar sweet-and-sour sauce

Place sausage, peppers, and onion in foil bag. Mix Tabasco sauce with sweet-and-sour sauce in a small bowl and pour over the mixture in foil bag. Seal bag edge tightly. Place foil bag on grill; cook for about 45 minutes, turning every 15 minutes. This is great as an appetizer or main dish. To serve, use skewers or load onto chunks of crusty bread.

I do this in the oven at about 425. I use a casserole dish with a lid and stir every fifteen minutes or so. I end up making double the recipe in two separate dishes. For Hubby's, I use the jalapenos with the seeds and use a white onion. For wussie me, I use the green peppers only, yellow onion, and 1 teaspoon of Tabasco sauce.

1tsp lime zest
1/4 tbsp lime juice
i jalapeno seeded
1tsp garlic
2tsp soy sauce
3 tbsp olive oil
chili powder and cayenne to taste
cilantro and honey to taste
2 lb shrimp

combine and marinade no more than 20 min in a resealable bag
grill till done

Ingredient Ideas - really it's up to your family!

  • Romaine lettuce
  • Feta cheese
  • Cubed cheddar cheese
  • hard boiled egg
  • carrot
  • ham cooked and cubed
  • cherry tomatoes
  • radishes
  • avocado
  • cooked and shredded chicken
  • bacon pieces
  • Salad dressings

Directions:
1. Wash all produce and chop into pieces your kids would eat. Separate each food into its own compartment in a muffin pan.
2. Give each person a bowl with just the romaine lettuce in it and allow them to pick what they want on their salad.

FREEZER CORN - Yields approx 10 cups per dozen ears.


Now is the time corn is on sale, and last year many of you enjoyed my Mother-in-Law's quick and easy way to do it so here's the guide for you again to enjoy. This is the perfect time of year to buy it and then freeze it for winter plus it's yummy! Head to your local farmstand, gather your friends and get shucking!

A favorite recipe of mine is Freezer Corn. The slickest trick I learned was to use an angel food cake pan and an electric knife. Holding the corn in the center of the pan, use an electric knife to slice down the sides and allow the kernels to just fall into the pan – it is quick and easy and minimal mess!!!!

The recipe is:
9 cups raw corn (approximately 20-24 ears, depending on size)
2 cups water
1/3 cup sugar
2 teaspoons salt

  • Bring all to a rolling boil (actually the sides just boil).
  • Take from stove and let stand to room temperature.
  • Divide corn and juice into containers. For my family, I just measure 2 servings (1/2 c. each=1 cup) into ziploc sandwich bags. Then I place the bags into a cake pan and put in the freezer.
  • When they are frozen (may take a couple of days), I take the bags from the pan and transfer them to a Ziploc freezer bag. The amount of servings depends on how much you put into each bag or container.
  • When you go to eat it later, just heat it up without water in the microwave or a pan.

Alli and I were tweeting a few weeks ago about the fact that every Friday night is homemade pizza night at her house and during the summer they grill it. A dear friend of mine (yuppers, that's you April!) also does Friday night pizza nights and it's starting to sound really fun! Anyhoo, Alli sent us her grilled pizza recipe to enjoy this week for our Summertime Recipes.

I'd love to hear if anyone else does Friday night pizza nights or wants to share their fave pizza or grilled pizza recipes below. Here's Alli:

It’s summer, which means there’s no way I’m turning on the oven in 80-90 degree heat. Just no way. Did you know that we don’t have central air? Yea, we pretty much live in the stone ages. So like I said, no oven. Unless the temp inside and outside dips below 80, which doesn’t happen until the wee hours of night.

Instead, we turn to the grill. Chicken. Turkey tenderloin. Brats. Sausages. And my all time favorite, pizza.

While there is a certain art to grilling pizza (read: you must be paying attention to the grill at all times) it’s nothing that you can’t tackle. But with a little bit of practice, you will have a tasty alternative to ordering out.

Note: If you have a pizza stone, it is ideal for grilling. If not, just use some tin foil, lightly sprayed with a non-stick spray.

1. Preheat the grill to about 400º to 450º on Medium. If you are using a pizza stone, put the stone on the grill while the it is preheating so the stone can heat up.

2. On a lightly floured surface, roll out your favorite pizza dough recipe into the desired shape and size (make sure it is not too large, or it will not fit on the grill). Some of my favorite recipes are Beer Batter Pizza Dough or Whole Grain Pizza Dough. Your favorite store-bought brand will work as well.

3. Transfer the dough to a pizza stone or a piece of tinfoil sprayed with cooking spray. Go slow, so the pizza doesn’t loose its shape during the transfer.

4. Place the crust on the grill to par-bake, for about 2-3 minutes, until the dough is lightly browned and firm. Watch closely, the areas directly above a flame can easily burn.5. Remove the crust from the grill. Lower the temperature of the grill to Medium Low.

6. Add desired toppings to the par-baked crust. Some of our favorites are pepperoni, Italian sausage and chicken BBQ.

7. Place the pizza back in the grill and close the lid. If using tin foil, discard it and place the pizza directly on the grates. Keep the temperature at 400º or lower.

8. Once the cheese has melted and is bubbly, your pizza is done. If you find that the crust is done, but the cheese has not melted, move the pizza to the top rack so the cheese can continue to cook, while avoiding burning the crust.

9. Let the pizza cool for a few minutes before cutting.

10. Enjoy with a glass of your favorite wine, beer or beverage of your choice.

One trick we’ve learned through our pizza making days is to add a little bit of kosher or sea salt on the edges of the pizza crust. To do this, when adding the ingredients to the pizza, simple brush the edges with a little bit of melted butter or olive oil and sprinkle with a little salt. It adds a nice flavor to the end of the slice.

We're doing a whole series of recipes from Mummy Deals readers that are perfect for summer gatherings: they're easy breezy and require limited work! Thanks Amy for this week's.

It's called MOON CAKE and is called that because of the way the bottom ends up when it is cooked. It's basically a flat eclair and completely DIVINE!

Ingredients

  • 1 stick butter
  • 1 cup boiling water
  • 1 cup flour
  • 1/4 tsp salt
  • 4 eggs
  • 6oz vanilla pudding
  • 8oz cream cheese
  • Cool whip
  • Chocolate syrup
Directions
*In a saucepan melt 1 stick of butter in 1 c. boiling water. Add 1 c. flour & 1/4 tsp salt. Cook, stirring contantly until mixture is smooth and forms a soft ball. Cool slightly.
*Add 4 eggs, one at a time. Beat until smooth. Flatten mixture on a cookie sheet and back 20 min. at 400. Cool.
*Top with two 3 oz. packages Vanilla Pudding, mixed according to pkg. direcetions and combine with 8 oz. cream cheese. Spread top with Cool Whip. Drizzle with Chocolate syrup. Top with slivered or slice almonds.

The is the BIGGEST crowd pleaser EVER and it is SUPER easy!

Summertime Recipes: Veggie Pizza

This summer my Mummy Deals readers are helping put together their fave easy breezy summertime recipes. This one is from Kristi and is a great alternative to warm pizza on a hot day.

Directions

  • 2 tubes of croissant rolls - roll then out in a cookie sheet and bake
  • In the meantime mix a Knorr veggie dip mix with 8oz of sour cream, and 8oz cream cheese softened (you can use low fat for both of these)
  • Once the croissant is cooled, spread the mix on and then top with raw veggies (green onion, broccoli, carrot shreds, cauliflower, cucumber)
  • Then add some shredded cheese (you can use fat free too).
I make 2 sheets of this for all the summer parties, and it goes quick!

Ingredients
one lb strawberries,
1 containier of raspberries,
2 kiwis,
2 apples
2 tbsp jam
1 tsp white sugar
2 tsp brown sugar
Tortillas
Cinnamon

Directions
Cut the fruit into small bite sizes.
Add lemon juice to stop the apples from turning brown
Add 2 Tbsp. jam, 1 tsp white sugar, 2 tsp brown sugar.
Serve with cinnamon sugar crisps made from tortillas cut up and sprinkled with cinnamon and sugar. Put in oven 350 degrees for 8 min.

Notes: Makes a lot. Might want to cut in half. refrigerate left overs.

  • 4 cups strong mint tea
  • 4 cups mango nectar
  • 4 cups sparkling water
  • 12 oz lemonade concentrate
  • Mix together and use mint leaves to garnish
